cleaned the cheek fat and seasoning. Meanwhile, chop the onion and garlic.
Put the oil in a pressure cooker, add the onion and put it on the fire to soften. When golden brown add the garlic. After a while they are well cooked, add the meat and bay leaf. We turn and fry a little.
Add the white wine and water (more or less to cover the meat). Cover the cooker and keep it so for 15 minutes (counted from the time when steam begins to flow through the valve).
Open the pot and if we see that even the sauce is very clear, we took the meat and reduce for about 5 or 10 minutes, cover pot. Serve
